One table or more
i hav a list of items and for each item there are 100 fields of information that describe that particular item. I wonder if i should break all this field up into several table or i should just store all this information in one table ??

If any of the information is redundant, then yes, you should consider breaking it up.
What type of "information" is it? Does each record have 100 pieces of "information"?
