What do you think they are written in?
My guess would be C or C++ or the very latest versions maybe written in visual C++ or better still write MS and ask them, they may tell you.

Theres also a chance that the latest or if not, the next version of office might be written C# since Microsoft is slowly sliding over to using .NET for everything. But, any past versions would likly be in C or C++ [I'd go with this one] as Viper said.
